Food that spoils during shipment or waiting at a depot or warehouse can have a noticeable impact on the bottom line of the producer and/or the shipper.  Not only may the produce be a complete write off, the transportation cost and opportunity costs must also be considered.  Chemical vapor sensors can track the progress of fruit and vegetable ripening in real-time during transit.  This will allow the expediting of shipments that are threatened, or the delaying of shipments that are far from ripe, to allow higher priority produce to move ahead.
